VEGAN COFFEE CAKE
- 3/4 Cups Plant Milk (I'm using coconut milk)
- 1 Tsp Apple Cider
- 1/3 Cup Sugar
- 1/2 Cup Oil (I'm using olive oil)
- 1 Tsp Vanilla
- 1 1/4 Cups All-purpose Flour
- 2 Tsp Baking Powder
- 1/2 Tsp Salt
375 F, 190 C

I have literally made this coffee cake 8 times in the last two months. It’s that good!
Instead of making the topping in Jenny’s recipe I did what my Grandma Ginny used to do and spread jam in the bottom of the pan then poured the batter on top. The jam with the cake is such an amazing flavor! The cake is the perfect blank canvas for any jam you’d like to use. I used boysenberry jam.You can whip this cake up in no time, it takes me about 10 minutes to make and only 25 minutes to bake. You’ll have a perfect jam coffee cake in no time!
