Oh my gosh you guys! Holy moly! This is THE BEST vegan buttercream frosting I've ever made/ had! It spreads so nicely on a cake just like buttercream would and the taste is amazing! You have to try it out for yourself!
The trick to this recipe is using full-fat coconut milk in a can, not a carton of coconut milk. That, and putting the can in the fridge at least a week ahead of time so that the cream can firm up and separate, but the longer the better. You want the can to separate into thick firm coconut cream and watery thin see-through coconut stuff. You use the firm coconut cream. When I made this cake I used a can that had been in my fridge for about six months (still well within sell by date). I was really surprised by how this turned out because, like I said, I’ve made vegan buttercream before but it never really turned out how I wanted. I’m not a fan of using soy based products or overly processed vegan products to get the butter-like results. I would normally use a vegan icing made by mixing powdered sugar, coconut milk (in a carton), and vanilla extract together - but sometimes you just need a little buttercream to really finish a cake off.
Vegan Buttercream Frosting
- 3-6 Tbsp Refrigerated Full-fat Coconut Milk (from a can, not carton)
- 2 - 2 ½ Cups Powdered Sugar
- 1 Tsp Vanilla Extract (I use this)
You want your coconut milk to be in the refrigerator at least a week ahead of time so that the cream has a chance to separate and firm up. If your cream is separated you want to use the thick/firm white part and not the thin translucent part. For best results keep a can or two of this in your fridge so that the milk is always separated and firm. The firmer the cream more butter like the buttercream will be.
Start off with about 3 Tbsp of the firm coconut cream in a medium-large bowl, add in the powdered sugar and vanilla extract. Beat well with an electric mixer to fluff up the coconut milk like butter. If your cream is firm/hard you can use more of it, if it’s only been in the fridge overnight you might need to use less. Depending on the consistency you’re looking for, add more cream or powdered sugar.
Add in food coloring if desired.
